Authentic chilled Gazpacho

Chilled, garlicky and so refreshing, this cold soup is delicious on a hot day

Ingredients
  

  • 1 kg ripe plum tomatoes
  • half small onion
  • 1 small green pepper
  • half cucumber
  • 250 ml olive oil
  • 2 dessert spoons sherry vinegar
  • 200 g day old bread soaked in water
  • 1 clove garlic crushed
  • 1 small handful each diced tomateos, red and green peppers, cucumber, onion and croutons to sprinkle on top
  • salt and pepper to taste

Method
 

  1. Roughly chop the tomatoes and put into a blender with the chopped onion, pepper, cucumber, vinegar, oil, garlic and bread. Blen until smooth.
  2. Pour into a bowl, season, and leave to chill for at least an hour. Serve in soup bowls with the toppings sprinkled in.
