How to make brioche in a breadmaker

Basic Brioche Recipe

Ingredients
  

  • 2 tbsp milk
  • ½ tsp saffron strands
  • 3 large eggs beaten
  • 6 tbsp luke warm water
  • 125 ml/4floz/ melted butter cooled
  • 2 tbsp sugar
  • ½ tsp salt
  • 450 g/16oz/3 cups strong white bread flour
  • tsps instant or fast acting dried yeast
  • melted butter and sugar to glaze

Method
 

  1. Heat the milk until just scalded then stir in the saffron strands and leave to cool. This gives the dough that lovely yellow colour of brioche.
  2. Pour the milk infusion into the breadmaker bucket followed by the eggs, water, butter, sugar and salt.
  3. Cover the liquid with the flour and sprinkle the yeast over, making sure it doesn't come into contact with the liquid.
  4. Pop the bucket into your breadmaker and set to a basic white, small loaf programme with light colour.
  5. Once the programme has finished, remove the loaf from the bucket and brush with the melted butter and sugar to glaze.
